Before selling, rambutan must be stored in a cool, dry place at 2 to 6°C and at a relative humidity (RH) of 90 to 95%.
We recommend that consumers store rambutans at room temperature. Rambutans will quickly lose their flavour when stored in the refrigerator.
Slice around the outside of the rambutan, and then easily squeeze the fruit out. The flesh of the rambutan is a glossy white colour. The seed is not edible. The fruit is not only delicious when fresh, it is also incredibly tasty in fruit salads or in a dessert.
The skin turns red when the rambutan is ripe. A discoloration on the skin of the rambutan is often caused by oxygen and light. The product can still be sold, unless it is dark brown and dried up.
